Add a CommentIf you are considering a healthier diet, this is a fantastic book, written by a registered dietician. It addresses weight loss, chronic disease prevention (including cancer), supplements, genetic modification of foods, and tips for athletes on plant-based diets. Most recipes are do-able and are not too much of a stretch for the average person's cooking ability or palate. I will be testing out the baked lentils and rice casserole which takes 5 minutes to prepare (chopping onion, opening cans, and added broth and herbs). Recipe indicates 90 minutes cooking time in a deep dish (stir once every half hour), and I am fairly confident I can reduce this to 1 hour in a shallower casserole. She says: "Rustic and hearty, this simple baked dish will be a regular staple in your home." and I'm guessing she's right. She also discusses whether there is merit to the raw food diet some gravitate towards and the dessert recipes look pretty quick and easy to do if you have a food processor. I'm not sure I would start out with 4 cups of greens in your green smoothie, unless you are already used to green smoothies.
